“Why California?” California Olive Oil Council

The California Olive Oil Council was founded almost three decades ago by a small group of farmers. They’re a marketing and trade association and focus on quality. Kiler Ridge is an estate grown olive oil. They do their own milling and they have a beautiful orchard.

When processing olives into oil one of the things that’s really critical is the length of time from when you do the harvesting until when you get the processing finished. That’s because olives don’t have a lot of sugar inside of them, so soon after you pick the fruit, it dies from lack of sugar. That’s about four hours in. So they’re making all of the oil from live fruit before it dies.

The California Olive Oil Council is in the midst of a very important campaign called “Why California.” It’s intended to encourage consumers and retailers to look for the COC seal. It’s proudly displayed by almost 400 members of the California Olive Oil Council.
